Sumac, a spice with a unique taste
The aroma of sumac spice is a harmonious alliance between the lively acidity of lemon and more woody notes. This exceptional spice, carefully harvested in the mountains of Lebanon, brings a unique depth of flavor to your dishes.
How to use Sumac
Sumac is a versatile oriental condiment, which is gradually making its way into Western cuisine.
Among the Romans, sumac was used as a sour ingredient before the cultivation of lemons. Intense and long in the mouth, it is the perfect ingredient to complete the seasoning of a salad, spice up a marinade, grilled meat and fish. It is sprinkled at the end of cooking on roasted vegetables, sauces, rice dishes or cereals and can even enhance hummus or yogurt-based dips, adding a colorful and tasty note to your culinary creations.
Where does Sumac seed come from?
The red powder of sumac comes from the clusters of the Rhus Coriaria shrub, from the Anacardiaceae family.
We grow it on the heights of the Lebanese mountains, without pesticides or fertilizers.
The harvest takes place at the end of summer, when the clusters bathed in sunlight have taken on a beautiful purple hue.
After harvest, the sumac bunches are sorted and the leaves removed. The bunches are left to dry in the sun for 10 days, before being ground.
The benefits of Sumac
In addition to its culinary interest, sumac is an ingredient full of therapeutic benefits. It is particularly renowned for its high concentration of antioxidants, which makes it a valuable product for stimulating cell regeneration. The anti-inflammatory benefits of sumac are also prized, particularly in supporting inflammatory diseases or inflammations of the digestive system.
Finally, sumac is a very good cholesterol regulator, thanks to its stimulating action on the liver.
Adding a pinch of sumac to your culinary creations is a combination of indulgence and health benefits!
